乌打面包~中种发酵法

好久没有做面包了~这次尝试了不一样的做法期待它会比我之前做的方式还要软结果真的很软还比较有弹性也带有面包香~放了隔夜还是软的~这次做的乌打面包我超级爱的有点不敢相信是我做的哈哈因为真的很棒!吃了一口还想接一口呢~我的小熊包有没有很可爱一下^^,里面是包乌打的~
SPONGE-DOUGH METHOD
Overnight fermentation dough~ingredient :
 100g bread flour ,60g water, 1/4tsp instant dry yeast
Method:
1) Put yeast into water stir till dissolve,pour into flour mix into dough.
2) Fermentation for 1 hour at room temperature,then cover with clip film put in fridge for 12-16 hrs.
Ingredient A:
400g bread flour, 100g plain flour, 20g milk powder, 80g caster sugar, 1tsp salt, 2tsp instant dry yeast 
Ingredient B:
Overnight fermentation dough
Ingredient C:
1 egg, 240g cold water
Ingredient D:
70g butter
Method:
1) Mix A mix well,add in B and C mix into dough.
2) Add in D mix till smooth and elasticity dough.
3) Cover well,ferment for 50min or double it size.
4) Divide dough into 60g each,round up the dough, rest for 10min.
5) Add ingredient and shape up the dough to your desire,put on baking tray with baking paper on,let it ferment for 50min.
6) Bake in preheated oven at 180C for 12-15min.
*If you want the bread to look golden brown you can egg wash the bread before adding ingredient ^.<

最近爸妈发现了一些我跟坏蛋的事情,知道这一天迟早会到来~真希望我们能顺服他们要拿出勇气顺服他们,我知道他们尤其是爸爸一定会受很大打击只希望你会慢慢接受一切~知道这段时间你很伤心一个弟弟让你每晚睡不好,一个我让你那么伤心,还有妈妈您辛苦了每天都要听爸爸念经心里应该也不好受~就再一次让我不听你们的话好吗,我求你们不要分开我们好吗,给坏蛋一些时间让她做出一些成绩给你看证明她也可以做到的~我求老天爷帮帮我们吧~不管接下来这么样~我绝对不会放弃你~我爱你我爱你我爱你坏蛋!这段时间也辛苦你了~

乌打比萨

 第一次和坏蛋在家里烘东西也~我们来玩点东西~玩什么?玩点不一样的哈哈哈~坏蛋想的哦~用乌打来做比萨~她想用面包来做底~结果很不错吃也超级好吃的~在想这么好吃的东西怎么在外面没看过这样的配搭~还是我的坏蛋厉害这样都可以想到~而我的好朋友告诉我有个很简单做比萨的方法就是用wraps来做比萨想加什么料随你喜欢~所以我就买了wraps来试做,结果吃起来会让我们想到我们常去的Trapizza的比萨都一样好吃哦~所以两种底对我来说都好吃只要有乌打跟BBQ酱就好吃~重点是一定要乘热吃才好吃!凉了就没那么好吃了~
~乌打比萨~(我的最爱)
1)用水管放一张像三文治袋在面包上滚动到面包扁比较大个一点。(坏蛋的做法)^^
2)放BBQ酱,乌打,cheese等等就可以拿去烘了~180C大概15-20分钟。。
~熏肉比萨~
把番茄酱搽上wrap然后放cheese,bacon,hotdog,onion,capsicum,bbq sauce放上去就可以了~
拿去烘180C大概15-20分钟~
这些都是我们用的材料~下次还要再做的话用pasta的番茄酱比较香~
刚出炉的比萨可以放点parmesan cheese就会跟好吃哦^^

Mini Raisin Scones

Scone.. anyone? scone is a type of small Scottish quick bread and the texture is in between the bread and cookies...chewy yum yum~~and is very easy to bake,does not require long resting time..this mini scone is very delicious~my mum love this:)usually scone goes with jam or cream..but i didn't spread any jam or cream by eating plain is already so yummy~thumb up for this! will bake it again soon..^^ 
..Enjoy it with a cup of tea,taste great(relax mood on)..
RECIPES:
CAKE FLOUR-250G
BAKING POWDER-15G
SUGAR-80G
SALT-PINCH
BUTTER-80G
BLACK RAISIN-90G
MILK-50ML
EGG YOLK-1
WHOLE EGG-1
MILK(FOR BRUSHING)
STEPS:
  1. Mix sugar,butter,salt,mix well.
  2. Add in egg & yolk,mix well.
  3. Add in flour(1/2 first)*around 125g flour & baking powder,mix.
  4. Follow by pouring milk into mixture,mix.
  5. Then add in the rest of the flour,mix well & form into dough.
  6. Add in raisin,mix.
  7. Dust flour on table top and put the dough,shape the dough into rectangle shape,place in plastic bag & rest in chiller for 15mins.
  8. After chill roll out dough,use circle cutter to cut out dough.*If you reuse the dough for more than 3 time the scone will be harden.
  9. Slightly brush some milk on the dough before baking.(This is to give a shiny look)
  10. Bake at 200C for 20-25mins. 
Does this look like a scone Christmas tree?...eem 70% like ba~haha^^christmas coming soon still haven decide how am i going to celebrate it ?.?clubbing?maybe..this year i want to wear a christmas hat XP..
HAIZ..got to stop thinking about christmas first..my exam is on the next week and this week is my study week,today going to study very hard..after exam then play super hard haha >.<..if i burnt the book into ash and drink it and it work..image how good it is...lol..okay just kidding..

Anpanman bun---面包超人

HAHA~~such a cute bun!!you know why i shaped the dough into a anpanman面包超人 face because my friend(kester) said that one of my other friend(sze hua) face look like anpanman..and last week i have my baking & pastry lesson,this time round we baked red bean bun so i shaped one of the dough into anpanman for my friend^^from that moment i felt that i am addicted to make such kind of cartoon or cute bun..lol!! So i baked some bun at home and again this anpanman bun is specially make for my friend sze hua...hahah.. 
 Ought this anpanman bun didn't have the eyebrow but it still look so awesome to me ; P but..the right side of the forehead since like have been banged or hit by something else..anyway never mind it still look alright^^i used chocolate chip and melt it and roll it out to form the eye..this bun is plain..kosong one.. 
 This not bad too right..i love emotion bun>.< this is a butter bun....i love this =P

PIZZA BUN

3pieces of HAM,CHEESE,MUSHROOM PASTA SAUCE,ONION & MUST HAVE BBQ SAUCE!!

HOT-DOG,BACON,HAM, CHEESE,ONION, MUSHROOM PASTA SAUCE & BBQ SAUCE..


RECIPES (sweet bun)9pcs:
Instant dry yeast-8g
Bread flour-280g
Sugar-35g
Milk powder-15g
Water(cold)-125g
Eggs-1no
Salt-4g
Butter(cold,cube)-35g
STEPS:
  1. mix yeast,flour,sugar,milk powder into mixing bowl and whisk at low speed to mix well.
  2. add in cold water and egg mix well.
  3. then add in salt,follow by the cubed cold butter,whisk well. 
  4. Fermentation the dough for 1-1.5hrs or till dough it size.
  5. after fermentation,punch down the dough or use finger tip to press around.
  6. divide the dough,each dough 60g,shape the dough into round shape.
  7. (beaching)-rest for 10mins on table,use plastic bag to cover the dough.
  8. after rest ,shape the dough to your desire shape and add any ingredient that you like.
  9. Proof again for another 20-30mins.
  10. egg wash.
  11. send to bake at 200C for 15mins or until golden brown.
*after bake you can brush some melted butter over the bun to make it more shiny and nice.
This the fermentation part after 1 hr the dough had rise to double it size..and is time to punch down or use finger tip to press the dough..
Beaching time~~
There it go.. look so yummy!^^comment from those who have eaten all this bread said is very nice..so happy..hardly see my brother eat bread but this time he ask me to bake more pizza bun he said is super nice he like it..wow..^^
Is time to pack it and give it to my friend..left some bun for my family: ) haha..you know what..when my dad came home and saw all this bun on the table he asked who bought all this bun?..then my mum told him is your daughter who bake it..my dad said the look of the bun look like those bun selling at the bakery store..haha..

EASY FOCACCIA BREAD & PIZZA BREAD

Whoo..this morning actually wanted to go out with my parent to the world food fair expo at suntec but in the end i didn't went out with them because of some reason..and i have no more mood to go out them..after they went out i went straight to my bedroom and my tear burst like tap water ;'( wat a sad morning..after crying feel so much better but the problem still not resolve till now..haiz..stress..okay enough of all this..
After my shower.lunch(thai tom yum instant noodle)with lemon juice..movie(THE RISE OF THE PLANET APES)a nice movie downloaded from funshion..in between of the movie i went to bake focaccia bread so while waiting for the bread to be proved i can continue to watch my movie hehe a good way to burnt my time.. 
Ingredient:
High protein flour-300g
Caster sugar-10g
Salt-1/2g
Instant yeast-4g(1tsp)
Water-170g
Olive oil-10g
Mixed herb-2tbsp
Method:
1.Mix all ingredient and knead the dough for 10-15mins.
2. Cover the dough in a bowl with plastic wrap and let it prove at warm place for 1-1.5hr or till double it size.
3.After prove punch down the dough and shape the dough into oval shape and poke some hole.(add topping for pizza bread)
4.Let it rest for 20mins at room temperature cover with plastic wrap. 
5.After rest brush with olive oil.
6.Bake in preheat oven at 180C for 25mins,serve :)

Give my parent to try first mmm..they love it my mum like the plain one my dad love the bread with topping..my mum said this will be my tomorrow breakfast with kaya and butter spread haha..then me myself try it yummy i love the texture very soft and i like the aroma of the mixed herb..next time should add more herb or try adding fresh rosemary whoo..nice..nice..
This two pieces of pizza bread with hotdog,sliced onion and cheese topping with tomato paste and bbq sauce is specially for my brother because first time see him so hardworking memorizing his exam notice for the pass few day and this is his reward hehe..as he has finish his theory exam today^^he eaten and said this is more nicer that the previous pizza that i made he said he will sure finish up the whole thing by tonight lol..but his friend asked his out for pool so he wouldn't be able to finish up by tonight..

Baking made me forget about all those unsolve matter for a moment..made my mood going up again..but after everything done all those unsolve matter popping out again..haiz..;'(how am i going to solve this??..i can't keep on dragging it because i still have to tell my parent in the end so i should tell them the early the better..but the problem is i not dare enough to tell them please god give me some power so i dare to tell them..

HOT DOG BUN

My first bread very happy i make it^^this bread is easy to do and the texture was soft i like it..my mum said i did a good job haha..not bad first time bake bread have this result hoho..baked this bread during a very hot weather made me sweat like i having sauna good can burn my fats..will bake bread again this weekend : )Hot dog bun this is my and my brother favorite..yum yum >.<~~simple and nice^^
Ingredients:
Bread flour-200g
Salt-3g
Instant yeast-4g
Warm water-100g(best at 30C)
Egg-20g(about half an egg)
Butter-20g
Filling:Hot dog,pizza topping cheese
Methods:
1)Sprinkle yeast over water,stir till yeast dissolve,leave for 15mins or bubble appear.
2)Put flour,salt,sugar and butter together.
3)Pour the foamed yeast and egg,mix well and knead for about 10mins.
4)Form into smooth dough and place into a bowl cover with plastic wrap.
5)Rise at warm place for 1hr30mins or till 2-3 time in size.
6)After rise use finger to poke a hole if it doesn't bounce back mean its done then knock back the dough.  
7)Divide the dough into few portion,rest for 10mins.
8)After rest, shape the dough,put the hot dog or to your desire filling.
9)Rise for another 40-50mins then egg wash.
10)Bake in preheat oven for 15mins at 200C or till golden brown.
Cheese stick added too little cheese=.=!
Kosong~plain one i spread some strawberry jam taste delicious~~ 
~~The before and after bake look,they are hot dog bun,cheese stick bun and kosong bun~~
