RED RUBY DESSERT

2 packet of fresh water chestnut is staying in my fridge for quite sometime this is because my brother said he want to make thai red ruby dessert till now he haven do so i just have the mood to help him make this dessert haha..but i only used one packet other packet i will make a baked chestnut..this dessert is very easy to make most important thing is when u eat it, it feel so fresh and cool.. woohoo..so suitable during hot weather..^^
Ingredients:
15 pieces of water chestnuts
5 drops of red colouring
3 tbsp of sugar(melt in hot water)
2 cup of ice
1 cup of tapioca flour
1 packet of 200 ml coconut milk
Steps:
1.Peel the water chestnut skin and cut it into small cubes.
2.Add red colouring to cubed water chestnut,mix well.
3.Dust with tapioca flour.
4.Boil water chestnut in boiling water until all the water chestnut flood up(about 3min).
5.Refresh the water chestnut in cold water. 
6.Strain it and mix with coconut milk ,ice and sugar syrup. 
7. READY TO SERVE^^ 
Boiled water chestnut~~look so shiny..Father day going to make this dessert^^
