BLUEBERRY CHEESE CUPCAKE

Is too lovely:) I baked this blueberry cheese cupcake for my best friend as a wedding gift,i am so bloody happy with my result of this cupcake it just look so sweet and blueberry plus cheese goes very well together but next time i will put more cheese haha i am a cheese lover..and blueberry lover this cupcake just so good for me..my lovely best friend love this too..and i was my best friend bridesmaid feel so happy^^
Makes 11 pieces
Ingredient:
A: 125g butter
     85g icing sugar
     2 eggs(beaten)
B: 125g plain flour
    1tsp baking powder
C: 100g blueberry pie filling 
     30g cheddar cheese(grated)

Method:
1.Beat butter and sugar of ingredient (A) until smooth. Add eggs in a slow stream. 
2.Add in ingredient (B) and mix until even.
3.Add in ingredient (C), mix well and spoon into paper cups tree quarters of the way up. Arrange on a baking tray.
4.Bake in a preheated oven at 150C for 20-25 mins. Cool cakes, decorate as per desire.

Buttercream Frosting:
  • 200 grams soft icing sugar, sifted
  •  120 grams unsalted butter, room temperature
  • 1 teaspoon pure lemon extract
  • 4 tablespoons whip cream
  • For the Frosting:
In an electric mixer, cream the butter until smooth and well blended. Add the lemon extract.
With the mixer on low speed, gradually beat in the sugar. Add the whip cream and beat on high speed until frosting is light and fluffy (about 3-4 minutes).
This is decorated with butter cream and strawberry,simple and sweet..>.<
Nicely packed into a cupcake box i love this..my mum said this is nicer than the outside selling one..
Lastly tied it up with a ribbon and is just too perfect as a wedding gift for my best friend^^And off we go to the wedding..

COFFEE COOKIES :)

coffee coffee..i love coffee everything that is coffee flavor i will love to try it^^yummy:) this recipe is given by my cousin a very nice coffee cookies...once you take one to eat you will sure take the second pieces and it is damn nice that you cant stop taking ended up you will eat about 5-6pieces at a time>.<when you bite it you will taste the coffee aroma is super fragrant ... i love this coffee cookies very much,thanks to my cousin by sharing such a delicious cookies recipe:) 
Ingredients:
  • 150g butter
  • 75g icing sugar (i put 45g)
  • 1/2 egg
  • 200g plain flour
  • 1 tbsp instant coffee powder + 1tbsp hot water
  • 2 tsp coffee paste
  • 1 tbsp rhum (optional)
Method:
1. Mix butter,icing sugar,egg in mixing bowl.
2. Add in plain flour,instant coffee+hot water,coffee paste,rhum(optional),mix well.
3. Use nozzle to pipe the mixture on baking tray.
4. Bake at pre-heated oven at 150c for 25-30 mins.
5. READY TO SERVE:)

This cookies is so delicious that the next morning from a full filled container left only half of it :)
This is before bake,the first batch i adding chocolate chip on it,this cookies goes well with chocolate chip next time will add chocolate rice into the mixture:)

NO BAKE OREO CHEESE CAKE-Mother day

 8/5/2011 we celebrated mother's day at home, i think this is one of the year my mum is most touch one because this is my first time doing a cake and lunch meal(will post on next blog)for her and family,on that day i feel that her smile is super sweet >,< my mum make my day with her sweet smile! and i make my mum day haha..i make this cake on the previous day and decorated on the next early morning..recipes obtain from Honey Bee Sweets a million thanks to her:)
 
Below recipes copy from Honey Bee Sweets:
Ingredients for an 8" OREO Cheesecake
135g crushed OREO cookies (no cream)
65g butter, melted
500g cream cheese, room temperature
160g caster sugar plus the cream removed from the cookies used for the cake base
2.5 tsp of gelatin powder, melted in 4 tbsp of boiling water
2 tbsp of fresh lemon juice
200ml dairy whipping cream, whipped
125g of OREO cookies, roughly chopped
Method:

  • Grease and line with parchment and plastic wrap an 8" spring form pan.
  • In a large bowl, combine the melted butter with the crushed OREO cookies and mix well. Then press the mixture on to the base of the 8" spring form cake pan. Place in the fridge to chill for at least an hour.
  • Beat the cream cheese and sugar till mixture is nice and smooth.
  • Add the gelatin mixture and lemon juice mix well. Then gently fold in the whipping cream, follow by the OREO cookie chunks.
  • Gently pour the cream cheese mixture into the cake pan and let chill for at least another hour before serve.

I love this shape i am so lucky to find a heart shape mold at daiso..so i able to have this beautiful heart shape chocolate using unsweetened cooking chocolate.. 
Wrote a happy mother day in chinese:) Decorated with some raspberry..nice.. 
 LOOK at the inside of the cake chunk of oreo cookies beautiful and YUMMY...
Taste like oreo ice-cream after frozen it as what Honey Bee Sweets said;) i love this cake because is easy to do and not so sweet i rather eat this then oreo ice-cream.. :P
A sunflower bought from express flower..when buying this flower i was holding the most nicely decorated   sunflower in the end when i put down the flower and turn around to see other flower..that most nicely decorated sunflower had been taken by a guy and make his payment so fast>.< and i have to choose again..lol..anyway i earn a KISS FROM MY MUM on this day..hoho..

PastaMania - Leisure Park Kallang

Early in the sunday morning me,yee jie and my brother went for bowling at leisure park kallang not bad such a long time didnt play still can score about 100 plus point..o ya before that while we travel our way to stadium mrt station my brother forget to bring his wallet! nevermind so he purchase the green card  at the machine and purchase also can purchase wrong place..lol..suppose to tap stadium he tap kallang and purchase it..alright enough all this crap anyway after bowling we went to pastamania to have our lunch..

(order by my brother)i love this very very damn nice the cheddar cheese inside very nice dip with the provided sauce taste so prefect.. recommended..GOOD

i love Pastamania pasta especially the cheese stick ,we spent s$36.50 for the above item and drink..for 3 person..after having our lunch we went to supermarket to buy something we spent almost 2hour in the supermarket haha..because of me i love shopping in supermarket and i can learnt new thing too..slowly take my time to look at those thing in the market can let me distress..[=].[=]

Mr.Curry -Marina Square

Today went to Mr.Curry at Marina Square with my cousin yee jie to have our early lunch, FINALLY i went to this Mr.Curry as i always wanted to try their japanese curry. I guess we will the first customer haha.. as it was sat about 11st a.m. a bit early and its weekend everyone would like to sleep more..after finish our lunch my cousin company me to Paulaner Bräuhaus to apply  for part-time..as i always wanted to work in such restaurant  and bar...
Clam Omelette Curry Rice(white sauce,non-spicy curry)
This order by my cousin this sauce has a very strong whipping cream aroma..
Too simple..
Sausage Omelette Curry Rice(original sauce,spicy curry)
This is order by me the sauce taste quite fragrant but i expect slightly more spicy then this next time should choose VERY SPICY CURRY...the omelette with like half sausage sliced into few pieces is so too simple feel like cheated as this dish is above s$10 plus a bit of salad i think i wouldn't  order their omelette curry rice anymore.. disappointed..

Portuguese Egg Tarts

It been such a long time i haven update my blog, now days are so busy in school ought is very tire but i am happy with it everyday spending my time in the kitchen is so wonderful. At least today i manage to update my Portuguese egg tarts which my friend and brother is asking for such a long time ago..haha..
Ingredients:
puff  pastry-1 packet
¼ cup granulated sugar
¼ cup whipping cream
¼ cup milk
3 egg yolks

Steps:
1) Press puff pastry into muffin pan.
2)To make filling boil whipping cream and milk in pot follow by adding sugar stir until sugar dissolve.
3)Let it cool slightly and add little by little into beaten egg yolks.
4)Pour in filling into puff pastry.
5)Bake at 200c for 15-20min or until top turn slightly golden brown, ready to serve:)
I really love this Portuguese egg tart it taste so lovely..now thinking of it i could said is really damn super yummy a must try recipe:P, will do it again soon:)..
