"Goujon" with home-made tartar sauce


Does this look appetite to you? Well this is what i cooked for my culinary lesson, the GOUJON with home-made TARTAR SAUCE this is pretty delicious i think i wouldn't buy anymore frozen fish finger from the supermarket as this is fresh and easy to do dishes. Not to forget the tartar sauce to go with the goujon and this is my first time doing my own tartar sauce i feel so happy with the result of the sauce and is not difficult to made this sauce, if you never made a mayonnaise or tartar sauce before why not try it? You still can adjust the flavour yourself rather then using the processed mayonnaise or tartar sauce and those who don't know a free knowledge for you, mayonnaise is the mother sauce of tartar sauce,thousand island dressing, aïoli and Remoulade.

Goujon
Ingredient:
Dory fish fillet-1pc
Egg white-1
Flour
Bread crumb
Salt-pinch
Pepper-pinch

Steps:
1.Cut fish into finger size, around 9-10 pcs.
2.Season it with salt and pepper.
3.Bread it with flour then egg white wash follow by bread crumb.
4.Heat cooking oil in pot,deep-fry until golden brown.
*(You can squeeze some lemon juice on it)



Tartar Sauce
Ingredient:
Egg yolk-1
Mustard-1 to 2tsp
Lemon-1/6
Corn oil-100ml
Onion-20g
Gherkins-5g
Capers-5g
Salt-pinch
pepper-pinch

Steps:
1. Beat well egg yolk and mustard in mixing bowl.
2. Slowly pour in corn oil and mix well.
3. Squeeze in lemon juice and mix well.
4. Season it with salt and pepper,stir well.(HERE YOU WILL GET YOUR MAYONNAISE SAUCE)
5. Add in chopped onion, gherkins, capers and mix well.
6. Lastly put in chiller for about 20mins and ready to serve.

  3. nice, I too use plenty of dory fish as its reasonably price, nice sauce to go with it.
